Job Title: Head Chef and Kitchen Manager

Location: Bridport

Salary: £20,000 per annum

Job Type: Full Time, 40 Hours per week

Our client is seeking to recruit an experienced and dedicated Head Chef and Kitchen Manager. The post holder will run their kitchen and café, providing a high-quality and accessible food offer at the Centre.

Job Role

This full time post will include regular evening, weekend and occasional Bank Holiday and Sunday working, as required.

Main function of the job

  • To ensure a high-quality and accessible food offer at the company that is part of an excellent visitor experience and generates income for the charity.

Key Responsibilities

  • Design menus for all catering activity including lunches, dinners, pre-show suppers
  • Deliver a broad range of food options and pricing levels
  • Ensure a strong children's / family offer, especially on weekends, holidays and around family shows/events
  • Ensure people with different dietary requirements are catered for
  • Recruit staff for agreed roles and ensure appropriate skills, qualifications and levels of experience, identifying and arranging staff training as required
  • Ensure the operation is safe and complies with Food Hygiene regulations, Health and Safety law and all other relevant legislation and regulations and ensure all staff work within regulations
  • Line Manage kitchen staff and devise rotas to cover all operational activity
  • Source all stock for the kitchen, and ensure adequate stock levels are maintained, considering best value in all decisions
  • Ensure food pricing is competitive while returning a strong profit
  • Work closely with the Finance Officer to track and record income and expenditure
  • Work closely with the Operations Manager to ensure catering activity supports the planned events programme
  • Work with the Programme Manager and Marketing Manager to devise special offers and catering themed to events
  • Organise replacement cover during periods of sickness or leave
  • Advocate for the work of the company.
  • The post holder is required to observe and promote the company's Policies and Procedures.
  • Any other duties as may reasonably be required.

The post holder is required to work flexible hours, including working evenings, weekends and occasional public holidays.

The Candidate

  • Experience of working in a busy kitchen environment
  • Experience of designing creative menus and using seasonal ingredients
  • Previous experience as a head chef
  • Sound knowledge of Health and Safety and food hygiene
  • Level 3 Food Hygiene Certificate or willingness to undertake this.
  • Good knowledge of allergens and HACCP
  • Stock ordering and management experience
  • Experience of working as part of a team
  • Ability to lead a team and ensure smooth service
  • Commitment to excellent customer service
  • Excellent communication skills
  • Ability to work under pressure and to targets
  • Ability to work flexibly; hours will include evenings and weekends
  • Driving Licence
